Mad River Beef
Together with our sons, we raise Angus beef on our pasture. All beef are antibiotic and hormone free. They are grass fed and then grain finished. Grain finishing gives the meat marbling that has improved taste for most people.
Please contact us to reserve your 1/4, 1/2 or whole beef that will be available from October and November 2024. You will work directly with Curly’s Custom Meats to select how your meat will be processed. A custom processing beef worksheet is on their website and the buyer needs to give the completed worksheet to Curly’s within 1-2 days after the beef are brought in. The buyer pays Curly’s directly for the processing fee and this is paid for when picking the meat up.
The cost to purchase a beef from us is $3.40/pound hanging weight. Hanging weight is approximately 60% of the live weight. The hanging weight carcass stays in a temperature-controlled freezer just above freezing for a period of time to improve the tenderness of the meat prior to processing. Once the hanging weight carcass is cut to your custom order, the amount of meat received is at least 62% of the hanging weight. We give you the actual hanging weight soon after the cattle are taken in and this needs to be paid for prior to picking up the meat. See below for some sample weights and estimated costs.
The live weight of cattle taken in for processing typically ranges from 1200 to 1300 pounds and this variation is due to how each beef naturally finishes and if it is a steer or a heifer.
Quarter of a steer

220 lb. x $3.40 per lb. = Approx. price of $748 + processing fee of approximately $250 = $998
This will yield approximately 136 lbs. of freezer beef (About $7.34 per lb. overall price from ground beef to steaks)
Half a steer
Approximate Hanging Weight of 440 lb. (Hanging weight is approx. 60% of live weight)
440 lb. x $3.40 per lb. = Approx. price of $1496 + processing fee of approx. $500 = $1,996
This will yield approximately 273 lbs. of freezer beef (About $7.31 per lb. overall price from ground beef to steaks)
Whole steer
Approximate Hanging Weight of 880 lb. (Hanging weight is approx. 60% of live weight)
880 lb. x $3.40 per lb. = Approx. price of $2,992 + processing fee of approx. $1000 = $3,992
Yielding approximately 545 lbs. of freezer beef (About $7.32 per lb. overall price from ground beef to steaks.)
A $50 deposit per quarter is required to secure a processing date and will be applied toward the hanging weight cost.
